It’s been nearly a year since my last post! Life has been full of some crazy twists and turns we didn’t see coming, but it’s a wonderful ride, and we are being rocket propelled towards some things we could only dream of, before!
I bring you a brand new, easy peasy recipe you can whip up in a few minutes, and with just a few drops of Peppermint Vitality, you can send this basic yet delicious recipe to a whole new level of taste bud pleasing dightfulness! This recipe is not very sweet, but it is rich in chocolate flavor, so you can serve up large portions and chow down on it , OR, you can plan to slice it into bite size pieces like fudge, and serve it to lots of folks. No judgement from me, you do you. 😂
This recipe is a household favorite, and easy enough for my 11 year old to throw together on her own. I love having my kiddos in the kitchen with me! I feel like cooking from scratch is kind of a lost art, and is often viewed as over complicated! My hope is that you will read my posts and feel inspired to get busy in the kitchen. 💜

* a fun little side note…. if you enjoy regular brownies, use all purpose flour, if you like cake texture, use cake flour, if you prefer chewy brownies, use bread flour. 😘
- baking dish/pan
- 2 Mixing bowls
- Sauce pan
- Whisk or mixer
- Rubber spatula
- 2 sticks, or 1/2 pound of butter or 1 cup
- 3.5 oz chocolate bar
- 3 oz. unsweetened cocoa powder
- 3 large eggs
- 1 1/2 TBSP coffee
- 1 TBSP vanilla
- 1 cup sugar ( we use raw)
- 3/4 cup flour
- 1/2 TBSP baking powder
- 1/2 tsp salt
- 1 1/2 cups chopped walnuts or pecans (optional)
- 5 to 7 drops of Peppermint Vitality Essential Oil
Preheat oven to 350°
Step 1. Butter and flour your pan or baking dish. I’m using a 2 1/2 quart corning ware baking dish, but often use my 8 inch round metal cake pan.
Step 2. Carefully chop the candy bar into chunks that will melt quickly. Melt together, butter, 3/4 of the chocolate bar and unsweetened cocoa powder. Stir it often, and turn off as soon as everything is well incorporated. Allow to cool.
Step 3. Beat eggs, coffee, vanilla, and sugar.
Step 4. In separate bowl, mix the flour, baking powder, salt and walnuts.
Step 5. Stir the cooled chocolate, butter mix together with the eggs mixture, incorporate well, and slowly sprinkle the dry mix into the wet as you stir continuously . Add your peppermint drops, and give it one last good stir!
Step 6. Pour this thick batter into your baking dish and place into your preheated oven. Bake 20 minutes, and then tap it firmly about 10 times on your rack and bake about 5 to 8 minutes longer. You will know when it’s done by the cracks and tiny bubbles on the top!
Perfection!!! It’s a little gooey, a tad moist, the top and edges go a bit crisp and it’s scrumptious!
